Air-Fryer Lemon Chicken

Anyone who knows me, knows I can NOT cook. Period.

I’m the worst.

However, my mom, Madre, has been diligently exposing me to quick, easy meals I can cook when I leave her house (again). They’re super easy so I’ve been taking notes in order to recreate these meals at home, and I thought I would share my favorite with y’all! (And use as a way to keep this recipe safe as I move around)
Air-Fryer Lemon Chicken - Ingredients
  • Olive Oil
  • Lemon Juice (or one sliced lemon)
  • Raw Chicken
  • Lemon Pepper Seasoning
  • White Rice
  • SteamFresh Veggies (or your favorite steamed veggies)

*Disclaimer, Madre cooked and prepared all of this, I just took the photos. I will refer to her throughout this recipe as “we,” but make no mistake, I did not actually make it… This time:)
​1. Prepare the Chicken
Rub a slight amount of olive oil on the chicken, followed by a good amount of the lemon pepper seasoning, ensuring it is covered completely.

2. Cook the Chicken
​We cooked about 3 pieces at a time in the air fryer for 20 minutes at 390.

3. Prepare Sides
While the chicken was cooking, we prepared the side dishes. We used minute rice, and followed the directions on the box. We also used steamer bag veggies from Bird’s Eye. They’re super easy and can also be cooked in the microwave.

4. Serve
​When the chicken is done we like to cut it up before serving. ​
We like to create “millennial bowls” as my father calls them, so we just toss all of our finished products into a bowl and I like to finish it off with some lemon juice (real lemons can also be used).
